Christmas carp: the supply chain behind a three‑week selling season
How one cookbook author reshaped Czech fish farming. Half of all families eat carp on Christmas Eve, and farmers sell up to 90% of their year in three weeks — a fragile chain with one extreme peak.

The tradition of fried carp with potato salad on the Czech Christmas table has shallower roots than it looks. It is still almost a hundred years old — Czech‑style fried carp was brought into households by the founding mother of Czech cookery writing, Magdalena Dobromila Rettigová.
The combination took off after the Second World War, when carp was affordable for most families. How does the tradition stand today?
51% of families have carp and salad on Christmas Eve. About half of Czech households cook fried carp with potato salad, though chicken and pork schnitzels keep taking a bigger share.
A country of ponds
Czechia farms 16,000+ tonnes of carp a year and carp makes up roughly 86% of Czech freshwater fish production. Ponds used for fish farming cover about 40,000 hectares. Czechs eat about half of that production; the rest is exported, mostly to Germany, Poland and Austria.
Fish on the plate
Even so, Czechs are not big fish eaters — the average Czech eats about 6 kg of fish a year. And although this is a country of ponds, sea fish dominate the plates: freshwater fish account for only about 1.5 kg per person a year, and much of that is the Christmas carp.
One extreme peak
50 vs 90%. Planning carp sales is harder than running an e‑shop. A typical e‑shop does about half its annual revenue in the Christmas season, while fish farmers sell up to 90% of their carp in those few weeks.
What tradition does to a supply chain
“The influence of traditions and customs on supply chains is anything but marginal. They are often what drives demand in a given season. The Christmas carp tradition may not be as old as we thought, but that makes its role in Czech fish farming all the more important. Without the carp we would lose not only the traditional Christmas Eve table, but a tradition in the water of our ponds too. This whole fragile supply chain, with its extreme sales peak, exists thanks to one cookbook author. Merry Christmas!”
